What is Kaffir?
Also called Combava , it derives from “Citrus hystrix”, a plant typical of Australia and New Zealand.
The fruit is extremely sour, the peel contains many terpenes , limonene and above all citronellol which has a strong rose scent and its leaves release a citrus essence with an unmistakable flavour.
The Ginger.
It is a herbaceous plant of the Zingiberaceae family, native to the Far East . The part typically known as Ginger is a branched rhizome that grows horizontally in the ground and which is yellowish inside, with a pungent and very aromatic flavour .
